Ingredients

  • 1/4 cup reduced-fat mayonnaise
  • 1/4 cup chopped celery
  • 2 green onions, chopped
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1 package (12.3 ounces) silken firm tofu, cubed
  • 8 slices whole wheat bread
  • 4 lettuce leaves
  • Coarsely ground pepper, optional

Directions

  • Mix first 8 ingredients; stir in tofu. Line 4 slices of bread with lettuce. Top with tofu mixture. If desired, sprinkle with pepper; close sandwiches.
