1 In a small bowl, add flaxseed and water and stir to combine.
2 In a small food processor, add oats and pulse until ground.
3 Add banana and blend together.
4 Add the flax and water and blend until combined.
5 In a medium non-stick skillet over medium heat, add coconut oil and heat until melted.
6 Drop batter by the spoonful into the pan and smooth out to desired pancake size.
7 Wait 1 to 2 minutes for the pancake to start to firm up and flip.
8 Heat another 1 to 2 minutes on the other side and remove from skillet.
9 For the Cherry Plum Chia Jam
10 In a coffee grinder or high-powered blender, grind chia seeds until they are a fine powder.
11 Add cherries, dried plums, and ground chia seeds to a mini food processor or high-powered blender and pulse until blended.
12 Transfer to a small covered container and refrigerate for at least 2 hours to firm up.
