Cajun Red Beans and Rice

    • Cajun Red Beans and Rice
    • ½ tablespoon extra-virgin olive oil
    • ½ cup chopped green pepper
    • ½ cup chopped red onion
    • ½ cup sliced celery
    • ¼ cup water
    • 2 teaspoons Creole Seasoning (see recipe below)
    • 1 (15.5-ounce) can red kidney beans, rinsed and drained
    • 2 cups cooked brown rice
    • Yield: 8 servings (serving size: ½ cup)


Cook the rice in advance to save 45 minutes!


Heat olive oil in a large, deep skillet over medium heat. Add green peppers, onions, and celery. Cook until vegetables are softened, about 3-5 minutes. Add water and Creole Seasoning. Stir well. Mix in kidney beans and rice. Lower heat and cook another 5 minutes or until heated through.

Serving Size: Serving size = 1/2 cup
