If you, like millions of other Christians, have kicked off the New Year with a 21-day Daniel fast, you know the struggle of finding great recipes for your fruits-and-veggies-only diet.
But have no fear! Gospel singer Tina Campbell has come to your rescue with a roasted vegetables dish.
On Instagram Wednesday, the l Need a Day to Pray author showed off two scrumptious-looking pans of her “fast food” concoction.
According to Campbell, 42, the ingredients are simple: red potatoes, sweet onions, green beans, cherry tomatoes, seasoned with sea salt, rosemary, sage, garlic salt, pepper, fresh crushed garlic, and fresh parsley.
Sounds yummy, right?
Campbell, whose talent obviously isn’t just singing, but cooking too, prepared one panful with parsley and the other without.
Lots of folks were thanking the GRAMMY® Award-winning vocalist—some who are also doing the Daniel Fast. Plenty seemed eager to try out the recipe.
In case you don’t know what in the world a Daniel Fast is, it comes from the Bible in Daniel 1:8-14.
In biblical history, Daniel and his three friends, Hananiah, Mishael and Azariah, were all Jews who followed the law of Moses. They were in Babylonian captivity under the rule of King Nebuchadnezzar.
In Babylon, the eating habits of the captors didn’t fall in line with the Mosaic law, in that, they ate meat offered to idols which was forbidden. So Daniel, not wanting to defile himself with those dishes, asked if he and his friends could be excused from eating meat—thus, the no-meat standard of the Daniel Fast.
For those having trouble fulfilling their commit to follow it, Campbell’s assistance came right on time.
“This is fast food,” she wrote on Instagram. “Gotta kick the year off right.”
