1-16oz red kidney beans, drained & mashed
1 c. coarsley chopped onion
1 medium carrot, steamed & mashed
2 T. picante sauce or salsa(spicy or mild to taste)
1 c. crushed rice cakes (approx. 2 cakes)
1/2 c. whole wheat flour
1/2 t. salt (to taste)
1/2 t. pepper (to taste)
dash of chili powder
1. Mix all ingredients in a large mixing bowl. Add more flour to create a firmer mixture, or more salsa if mixture is too stiff.
2. Form mixture into balls & form into patties.
3. Bake 450 degrees, 10-15 minutes, until firm, brown, & done.
