This casserole dinner has it all – sausage, Progresso® black beans, rice and Green Giant® corn blended in an easy meal.
1 box (6.2 oz) fast-cooking long-grain and wild rice mix (with seasoning packet)
1 3/4 cups boiling water
1 can (14.75 oz) Green Giant™ cream style sweet corn
1 lb smoked chorizo or kielbasa sausage, cut diagonally into 1/2-inch slices
1 large green bell pepper, chopped (1 1/2 cups)
1 can (15 oz) Progresso™ black beans, drained, rinsed
- Heat oven to 375°F. Spray 2-quart round casserole with cooking spray.
- In casserole, stir rice mix, contents of seasoning packet and boiling water; stir in corn. Add sausage, bell pepper and beans; stir carefully (casserole will be full).
- Cover tightly with foil; bake 25 to 30 minutes or until rice is tender.
